Ms. Mattie’s Bar-B-Q Shrimp

 
Ingredients

  • 1 lb large shrimp

  • 2 scallion for rice

  • Kosher salt (if desired)

  • 16 oz bottle Ms. Mattie’s Bar-B-Q Sauce for marinating/garnishing/dipping

  • White rice

  • One lemon

  • 1 Avocado (ripe)

  • 1 onion, diced (optional)

  • 1 stick butter

  • 1 tablespoon Olive oil (optional)

  • Dash of course ground black or white pepper

Instructions

  1. Heat oil and butter on med high, watching closely, in deep dish skillet.

  2. Season shrimp as you like with or without skin/with or without head.

  3. Marinade for 1-2 hours or use Ms. Mattie’s Bar-B-Q Sauce to sauté.

  4. Place shrimp in hot pan allowing them to sear for 2-4 seconds on each side, then lower heat, cover for 1-2 minutes.

  5. Cover with ¼ cup Ms. Mattie’s Bar-B-Q Sauce. Simmer another 1-2 minutes.  Remove from heat allow to stand for 5 minutes.

  6. Then serve over with pan broth or beside rice.

  7. Garnish with lemon and Avocado slices.

Ms. Mattie’s Grilled Bar-B-Q Shrimp and Tuna Kabobs

Ingredients
​
  • 1/2 lb. fresh tuna

  • 1/2 lb. fresh shrimp (peeled) your chose of size

  • 2 cups Jasmine rice

  • 2 baby potatoes (1 red/1 white) (optional)

  • One clove fresh garlic

  • 1/2 lb large cherry tomatoes

  • One medium size onion

  • 2 large skewers (metal or bamboo)

  • Kosher salt (sparingly)

  • Course ground black pepper (dash)

Instructions

 

  1. Cut all meats and vegetables’ in to ¼ sizes or larger.

  2. 16 oz bottle Ms. Mattie’s Bar-B-Q Sauce for marinating/garnishing.

  3. Prepare rice as per package direction (a rice streamer is good to use) on stove top

  4. Allow shrimp peeled and tuna to marinate in deep dish for at 2-4 hours overnight.

  5. Thread skewers as desired alternating all foods used.

  6. Cook on grill to desired wellness, 2-4 min each side. Over cooking can cause drying of the meat and loss of taste and flavor.
